Delish Food Hack
I must share:
Easy food hack (if you have these ingredients, which I pretty much always do have, around the house.) First, you can fake curry vegetables so:
- chop up whatever vegetables you have into large-bite-sized chunks. Onions, peppers are good since they're sweet, and whatever else you have.
- heat up a pan, then heat up oil in it (whatever kind you like; I use olive) then toss the veggies in and stir-fry for about a minute on high-ish heat.
- then add salt, pepper, cumin, cardamon, and turmeric. Cinnamon is good too. All powdered, of course. Stir around with the veggies until it's good and mixed. This should take a minute. Also highish heat.
- take a tablespoonful of coconut oil and glop it in and stir it around until it's all melted and coats everything.
- then add maybe a quarter cup (or less) of water. We're still on high heat here. The water will finish cooking the veggies in a few minutes. When the water is all gone, the veggies are done and are coated with a lovely, fake-curry-coconut glaze.
- you can eat this as is (I've found this to be a great side dish) or you can add the piece de resistance. Just as the veggies are done cooking, add large chunks of feta cheese into the pan and stir until the feta is thoroughly coated with the fake-curry glaze and just starting to melt.
